One of my favorite recipes to make year round is a simple banana bread. If any of you, like myself, are known to have many a brown bananas and don’t know what to do with them, this is the perfect recipe as it’s great any time of the year. I also love that it’s versatile, which means I can always cater it to the needs of my guests, making it just that bit more special. You can add chocolate chips for extra sweetness or walnuts and pecans for an added crunch; or if you want to keep it eggless, you can just add an extra teaspoon of baking soda instead of the eggs. Whichever way you choose, this simple banana bread is sure to turn out delicious!
INGREDIENTS
- 1/2 Cup Butter (1 Stick)
- 1 1/2 Cups Flour
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- 1/4 Teaspoon Salt
- 1 Cup Sugar
- 2 Large Eggs
- 1 Cup Mashed Ripe Bananas (About 3 Large Bananas)
- 1 1/2 Teaspoons Vanilla Extract
- 3/4 Cups Semisweet Chocolate Chips (Optional)
- 3/4 Cups Walnuts, Toasted, Chopped (Optional)
- 3/4 Cups Pecans, Toasted, Chopped (Optional)
PROCEDURE
- Preheat oven to 350. Butter and flour 9x5x12 1/2 inch metal meat loaf pan. Whisk Flour, Baking Soda, Baking Powder, and Salt in medium bowl to blend.
- (Optional) Combine chocolate chips, pecans and walnuts in small bowl and add 1 tablespoon of the flour mixture and toss to coat.
- Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time (If eggless, skip the eggs and replace with 1 teaspoon baking soda). Beat in mashed bananas and vanilla extract. Beat in flour mixture.
- Spoon 1/3 of batter into prepared pan. Sprinkle with half of nut mixture. Spoon 1/3 of batter over. Sprinkle with remaining nut mixture. Cover with remaining batter. Run knife through batter in zigzag pattern.
- Bake bread for about 1 hour and 5 minutes. Then leave out to cool.
